Our master cider maker Matthew Austin has had a lifelong love affair with agriculture, science, and fermentation. After his passion led to journeys abroad and to some of the most world-renowned regions for cider, beer, and wine a seed of inspiration had been planted. While San Diego was recognized across the globe as the center for American Craft Beer and had a burgeoning wine scene there was a desperate lack of availability of high-quality craft cider, and that needed to change.
It did, however, have a rich culture of experimentation, craft beverage enthusiasts, a supportive community, and all the resources a new beverage company could want. So after much planning, research, tutelage, and test batching he began a search for his tribe. A group of passionate cider advocates, fermentationalists, designers, artists and industry business people who could help bring our project to life.
Setting a new trailhead is hard work, so he turned to one of his best friends Lara Worm. Thus began a two-year journey to bring a refreshing new tap room, educational venue, and distributed “new” beverage to ignite a thirst in Southern California.Go back
